When I am thinking of something for lunch or dinner, Mac & Cheese is not what immediately springs to mind. When I was a kid Mac & Cheese was not on the menu. The only time it might happen is if Mom was out of town and she made it for dad to put in the oven. Not a big hit at the dinner table.

Years later when we had kids Mac & Cheese would show up on the menu possibly one time a month I was cooking. Again, not very popular at the time.

 Now with the advent of cooking shows, Bar BQ, and gastro pubs Mac & Cheese is coming back in a big way. Made to order, special cheese blends, something other than elbow macaroni, and adding things like seafood and brisket to the ingredients. A few years back I was at Badger Mountain Brewing www.badgermountainbrewing.com, 1 Orondo Ave, Wenatchee, WA 98801 for the Bar BQ and someone said, “you need to try the Mac & Cheese”. I could get it with pulled pork or brisket and the portion size was enough to feed two people.

The pulled pork Mac & Cheese was ok, but the brisket Mac & Cheese was spectacular. The sauce was creamy and cheesy, they used pasta shells not elbow macaroni, and it was all made to order. Then it was served with some Bar BQ sauce on the side. 

I first tried a bite without the Bar BQ sauce, and it was ok, then I tried it with the BBQ sauce, and it was awesome. What a difference a light drizzle of BBQ sauce makes. 

So now I’m hungry as I write this, now I am thinking this sounds like lunch to me. I call ahead and there is no answer. It’s been a while since my last visit, I’m not that far away so I drive down and low and behold the hours have changed, they now only do lunch on Friday and Saturday. I’m a little disappointed but you know what? There is always Friday. I hope it is still on the menu.
